Yesterday was a beautifully, exhausting day!
It was only exhausting because my whole body is so sore, it made doing ANYTHING twice as hard. When I get up from a standing position, I have to walk on my tiptoes for about 10 steps before being able to place my heels on the ground. It’s that kind of sore.
It’s pretty serious.
After getting some work done and eating oats and eggs, we headed to the gym!
We had to run some errands and we grabbed our post-workout meal from Tasty Thai before heading home. I had the noodle bowl with beef and we shared some chicken satay.
Back at home, a package was waiting for us.
I don’t talk about our group home clients due to privacy but one of our clients LOVES swings! When we finished our downstairs, we did it specifically for our clients and installed springs from the ceiling beam with the plan to someday hang swings from them.
WE FINALLY GOT A SWING!
He loves it! Justin and I tried it out to make sure it was safe and then when we called him over he came running with a big, fat smile on his face.
So. Awesome.

The thick material provides just the right amount of pressure, like a hug, and the suspended in the air, gentle motion is comforting for him. Now if we can just get things arranged so he can see the TV, he will never leave it!
Dinner
Was a no-crust pizza bake!
Ingredients:
- Pizza sauce
- Turkey meatballs
- Pepperoni slices
- Mozzarella cheese balls
- Scamorza cheese
- Mushrooms
- Mezzetta Giardiniera HOT italian mix
Coat the bottom of a single serve Corning Ware dish with pizza sauce. Arrange 6 turkey meatballs in dish. Place mozzarella balls in open spaces around meatballs. Top with 6 slices of pepperoni. Spoon veggie mix over top along with mushrooms slices. Shred scamorza cheese over the whole thing. Top with a little more pizza sauce. (a little or a lot depending on how saucy you like things)
Bake at 350 for 20 minutes.
Dessert
was banana slices with natural peanut butter and mini-chocolate chips.
Second Dessert
was Sheridan’s Custard! Which I shoved in my face before even thinking about taking a picture.
Friday night calls for Second Dessert!
Just one more thing about our clients. They all wore their Royals t-shirts yesterday and looked pretty darn sharp! I felt proud and happy for them.
I add jalapeños to my pizza bake. It's more delicious than Stacy's.
