Go Back to Sleep

It’s Saturday!  The Weekend!

Justin and I both woke up around 4am and willed ourselves back to sleep for two more hours. Unfortunately, my brain sprung back to life around 6am and Justin is still snoozing away.



Started with making pasta salad and cookies for our client’s lunches. This is something I normally do on a Sunday or Monday so I have it done for the week, but I got behind.

I feel like I’ve posted about both these things before, but just in case, here they are again.  Get ready to be wowed!


Pasta Salad

I food process all the veggies, meat and beans for several reasons: #1-the pasta gets coated with everything, #2-No one can balk at the veggies or beans because they don’t even realize they are in there! #3-We have some clients that grind their teeth and have worn them down so hard veggies are a little tough to eat.

  • 2 red bell peppers
  • 1 yellow bell peppers
  • 1 large head of broccoli or whatever your grocery store sells in a “grouping”.  I bought 3 small heads that were rubber-banded together.  I use the stalk and all!
  • 1 ham steak
  • 1 can chickpeas (garbanzo beans) drained and rinsed
  • pasta of your choice. I usually use macaroni, but sister gave me a whole bunch of bow tie so I’ve been using that.  I don’t measure the pasta.  I just make A LOT because whatever I don’t use in the pasta salad, we will use for dinner one night.
  • 1 bottle dressing (Italian style)  I use Newman’s Own Oil/Vinegar or Family Recipe.

Cook, drain, rinse with cold water and let your pasta cool.  Food process all your veggies, meat and beans.  I have a giant bowl that the salad will be stored in so I just keep dumping the processed food into the bowl as I get them done.  Once everything is chopped to your liking, stir all together.  Slowly add pasta to the bowl stirring as you go so it gets incorporated well and everything gets coated with veggie/meat mixture. Once pasta is all added, pour one whole bottle of Newman’s Own oil and vinegar dressing (or whatever dressing you want) and stir to incorporate.

Store in refrigerator.  This will last us about 4 or 5 days making three good size portions a day for lunches.



I KNOW everyone as seen these!

  • 1 cup oatmeal
  • 1/2 cup raisins
  • 1/2 cup almonds (or any nut)
  • 2 bananas
  • mini chocolate chips

Food process the oatmeal, raisins and almonds until they are just a little coarser than flour.  Add bananas and process until creamy batter.  Remove blade from food processor and stir in mini chocolate chips to taste.

I use a scooper and place even size amount on a parchment lined baking sheet.  Bake at 350 for 15 minutes, flatten cookies and bake an additional 5 minutes.

The rest of the day

Justin got a massage.

I brushed the cat.


And then we saw a movie!


Obviously, it was my turn to choose the movie.  We both thought it was good.  A little heart breaking at times, but with that cast…..  They couldn’t mess that one up!

The amount of popcorn and Reese’s Pieces I ate at the movie pretty much did me in for the day.  I ate a chicken breast at some point and a piece of pizza.

We snuggled on the couch for the evening and watched Godzilla.

B O R I N G!

I kept falling asleep and finally just went to bed when it was near the end.  Justin suffered to the credits  but I know he was jealous of my ability to leave a movie when it was almost over.

Gym Time

I better get going.  Time to lift some weights and then hit up another spin class.  Keep my buns in your thoughts.  If you have ever taken a spin class, you KNOW how that second class feels when you first sit your fanny on that bike seat!
