I made these super yummy turkey meatballs the other day.
They are quick and easy too!
We bought some of those mini bell peppers for salads and then never ate them with salads. I hated to see them every time I opened the fridge just getting more old with each passing day.
So, I cut the tops off and threw them in the food processor with 1/2 an onion (because I had that left over as well) and two cloves of garlic.
I combined the peppers with ground turkey and ground turkey breast.
Along with some Thyme.
After all was happily combined.
I made little meatballs and placed them on a cookie sheet.
They cooked at 400 for about 20 minutes. I checked them with a thermometer and cooked until they were 160. I believe poultry is supposed to get to 165, but when I take them out at 160 they continue to cook for a bit.
This batch made 32 meatballs!
