Crockpot Chicken Soup

Crockpot Chicken Soup


You will want to get a spoon and call the crockpot your bowl. It’s so tasty. and Cozy. and good for your soul and your bones and your happiness.

The BEST part of making your own soup is you get to put what YOU love in it, in the amounts you LOVE.  I chop veggies according to MY taste. In this case, the amounts I ended up using were mainly because the crockpot was getting too full.  Don’t feel like if you don’t use the exact amount I list below that it won’t be yummy.  Because it will! Next time I will use fewer potatoes, more kale and more carrots, celery and onion. Or maybe I need to cut the potatoes smaller. Or buy a bigger crockpot!

  • 1 whole chicken
  • 5 small/medium potatoes
  • 3 whole carrots
  • 1 bunch of celery, including leaves
  • 1 yellow onion
  • 3 bay leaves
  • 1/2 bag cut kale (no stems)
  • 1 box chicken broth


  1. Clean and dry chicken. Set aside.
  2. Peal and cube potatoes. Put in bottom of crockpot.
  3. Place chicken on top of potatoes.
  4. Clean and chop carrots and celery. Put in crock pot all around the chicken.
  5. Dice Onion. Put in crockpot.
  6. Place 3 bay leaves on top of chicken.
  7. Completely cover with Kale.
  8. Pour 48 oz box of chicken broth over the whole pot.
  9. Cook on low for 8 hours.
  10. About half way through I stirred things around a bit.  All the potatoes and veggies had cooked down enough that I was able to submerge the kale in the broth.
  11. After 8 hours, remove chicken and shred. Return to crockpot.
  12. Salt and Pepper as needed.
  13. Enjoy!
  14. Cook on low for 8 hours.
