I just read something that popped up on my Facebook newsfeed and now I have to blog about it.


Glennon has a blog and it looks like she is also an author and now I will probably spend the rest of the day reading her entire blog and book and anything else I can find about her.


So far, I have only read this one post and I loved it!

It describes exactly how I feel about questions.

I often get scolded when I do not return the societal politeness that is: “Hi, How are you?”

When someone says to me “Hi, How are you?” I reply with “Very well thank you.”

No matter how I am feeling.

Because THEY DON’T REALLY CARE. They are just being polite.

This embarrasses Justin.  For those that only know Justin through this blog, he is one of the most polite, nice people you will ever meet (well, in public! ha! Winking smile). He will stand at a door for 15 minutes to hold it until someone finally relieves him of his duty. He will say “Bless you” every. single. time. someone sneezes no matter where we are, sometimes it’s just a whisper.  He smiles at everyone he sees and asks them “How are you?”

I love him for that, but that doesn’t mean I am going to do it too.  If I hold the door for you, you better hustle through and the next person better take over.

Of course, there are things I say just to be polite,  but this one saying comes up daily and Justin and I do not agree.

So, with that being said, you can imagine his embarrassment when someone says to me, “Hi, how are you?” and I reply, “Very well, thank you.” And DON’T ASK THEM HOW THEY ARE! gasp

When we walk away, Justin always says how rude that is and that I should have asked them how they were, “It’s the polite thing to do”, he says.  My reply to him every time is, “Why would I ask someone a question that I don’t mean?”  In fact, I feel like I AM being polite in even answering their question! Now I have to ASK them one?

That person doesn’t really care how I am.  People say “Hi, how are you” as if it’s one word.  They are not expecting you to really tell them how you are nor do they care.

When I truly want to hear how someone is, I ask them.  When I have the time to listen and care about how someone is feeling, I will ask and listen and open my heart.  Standing in line for groceries, is not that time. So, instead, I have a conversation about the moment we are in right now.  And it’s a light, friendly conversation that everyone walks away from feeling happy and good and we carry on with our day.

I don’t like the pressure of having to say the superficial “Hi How are you?” every time I see someone. And I’m not saying that Justin is superficial because he likes to do this.  Justin really does care about how people are doing and he will take the time, even if we are rushing through the grocery store, to listen to how someone is truly “doing”.

In fact, if we see someone we know in public and he doesn’t feel like he has adequate energy or time to have a lengthy conversation with them, he will avoid them like the plague.  Which has me rolling my eyes and sighing loudly because I have no problem saying Hi to people and moving right a long. Or briefly catching up and then saying I am in a hurry, but let’s get together soon because I want to hear more of whatever they are talking about.  I feel like we are both very polite people, we just have different ways of showing it.

Glennon’s post really captured me because it really shows how a question, even directed toward someone you don’t know very well, can create emotions so quickly. Just one question can let someone know how much you care and that you are paying attention.

I want to be better about that. Not asking questions is just as bad as asking a superficial question.

I hope you read her post because it’s sooooo good.

So, my question to you at 6am on this Saturday morning is:

How do you guys feel?  How do you feel about asking polite questions that you really don’t mean? Do you do it?

What questions do you ask to let people in your life know you are paying attention?

Turkey Meatballs

I made these super yummy turkey meatballs the other day.

They are quick and easy too!

We bought some of those mini bell peppers for salads and then never ate them with salads.  I hated to see them every time I opened the fridge just getting more old with each passing day.

So, I cut the tops off and threw them in the food processor with 1/2 an onion (because I had that left over as well) and two cloves of garlic.


I combined the peppers with ground turkey and ground turkey breast.


Along with some Thyme.


After all was happily combined.


I made little meatballs and placed them on a cookie sheet.


They cooked at 400 for about 20 minutes.  I checked them with a thermometer and cooked until they were 160.  I believe poultry is supposed to get to 165, but when I take them out at 160 they continue to cook for a bit.

This batch made 32 meatballs!

Yoga and the Gym

I spent most of Sunday and ALL of Monday being best friends with my heating pad and a bottle of ibuprofen andsomeicecreamandspaghettiwithmeatballs.

But YESTERDAY I felt like myself again!

I started the day with oats and eggs.


After getting everyone around here up and on their way for the day, we went to yoga.


It was GLORIOUS! And we did a healing mantra. It’s like she knows exactly what I need! (healing for my neck and back)

Back at home, I refueled with some tuna and green beans before heading to the gym.

I was pretty hungry by the time I got home, so I fixed a big fat salad and enjoyed some potato chips on the side.


Dinner was delicious!

Turkey meatballs with roasted, rosemary potatoes and green beans.


I had a pretty rough night with my back and neck soreness causing a headache and nausea.  It’s like lifting weights sets me back. I hadn’t been in there since LAST Monday when doing legs left me feeling miserable. So I stayed out of the gym and rested.  I was feeling better so I decided to do a full body workout. Sigh. Time heals, right? Well evidently I need more than a week.

Oh well. Back to resting and yoga and massage therapy.

I made this dress and leg warmers for my sister’s niece. I made a little hat as well but didn’t get a picture.


Justin started FlexPro Meals!


And We are getting NEW CAAAAAARPET!!! (said in my best Oprah voice)

The new carpet might be the most exciting thing in my life right now! Fo sho. I can NOT wait! It’s going to feel like a new house in here.

Nice Little Saturday

We had a nice little Saturday around here yesterday.

I mainly spent the day blogging.  I had all those recipes that needed to be shared. So quite a few posts got published yesterday.  Sorry if you felt attacked.


It was also one of these days…..peanut butter, chocolate chips, and Pretty Woman and Ibruprofen…you know where I am going with this.

The name of the game yesterday was EASY (and lazy).

I had some biscuits in the fridge so I made an easy meal for our group home clients.  They turned out so cute, I have to share!

Cheeseburger Calzones



  • Leftover hamburger
  • Cheddar Cheese
  • Spinach
  • Can of flaky biscuits



  1. Spray a cookie sheet with olive oil Pam. I like to put tinfoil down too for easy clean up.
  2. Flatten out a biscuit. Put hamburger, cheese and spinach on one side.
  3. Fold biscuit over itself and seal.
  4. Go around the edge with a fork to make sure its sealed tight.
  5. Poke holes in the top so air can escape.


Bake at 375o  for 15 minutes.


I served it to our clients with ketchup, mustard and Justin chopped up some pickles for the relish!


Not the typical recipe you usually find on KarateNurse, but it was fun to make and everyone loved it!

Friday Night Date Night

Friday started with the usual oats and eggs followed by a 30 minute massage and cupping.


Each time I go in, I feel better.  Less tight. Less stiff. Less pain. It’s working. (This post explains why I am having back pain.) I’ve got two knots that are being stubborn, but we’re gonna get ‘em!

Back at home, Justin and I ate and then did a little shopping.

I hit the sale rack at White House Black Market and got this super cute tunic for $20!


I wore it with Leggings from White House Black Market from last year, black boots from I don’t even remember when that’s how old, a Guess Necklace purchased last summer and a bracelet from RuLaLa purchased 2 or 3 years ago.

Put my fake hair in and WA-LA ready for our date night!


Date Night

We started the night at Wines by Jennifer.


They have a resident cat, Pinot.  He was enjoying himself by the fire in the tasting room while the rest of us drank wine.


After the tasting, we each picked our favorite and enjoyed a glass while nibbling on some bread, cheese, grapes and salami.


We just love that place and all the people that work there. It’s so cozy and friendly. There is no place quite like Wines by Jennifer.


We had plans with Justin’s Mom and her Fiancé for dinner, so we left WBJ and headed to Piropos.


We had such a great time!  We don’t get to go to dinner too often with them so we ate and talked and laughed until 10:30pm!


I was asleep as soon as my head hit the pillow!

Stuffed Cabbage Casserole

This quickly became Justin and I’s favorite casserole!  I will definitely be making this again!

I used the recipe from Skinny Taste.


I made it exactly as written except I only had one head of cabbage and no thyme so I used Mrs. Dash Table Blend to season the hamburger.


Oh man.

Simple ingredients. 


Easy and inexpensive.


But packed with flavor!


The cabbage turns out soft and buttery.

Some facts about Cabbage

Cabbage is a cruciferous vegetable like broccoli, cauliflower and Brussels Sprouts. It is rich in dietary fiber which aids our digestive systems, a source of Vitamin C and antioxidants which aids our immune system.  Cabbage also has anti-inflammatory and anti-carcinogenic properties!


Falafel with Tzatziki Sauce

I am so excited about this one!

I made Falafel with Tzatziki Sauce and it was soooo GOOD!


I’ll be honest. I had never eaten falafel. I’m not sure I have actually even seen one. I have heard of them, though, and I always thought they sounded like something I would like.

The recipe I used is from Budget Bytes


Check it out.  I followed it exactly.


At Budget Bytes, She mentions that she wished she would have pan fried them instead of using cooking spray (falafel is usually deep fried). So, I used just enough palm oil, like maybe 1/8 inch in pan, to get make them crispy.


They were crispy on the outside and creamy on the inside.


After making them, I Googled “falafel” and learned that they normally look like a hushpuppy.  I didn’t know that so mine are patties. Delicious little patties!

I also made Tzatziki sauce to go with them (recipe from the same post at Budge Bytes).  It is super easy to make: green yogurt, cucumber, garlic, dill.


Justin and I felt like we were eating a cheat. They are THAT good! Packed with protein and fiber too!

Oatmeal Banana Cookies

I FINALLY made these super easy cookies that have been floating around Facebook and Pinterest forever.


I used a recipe that popped up on my newsfeed. I was trying to find it again to give them credit and can’t find it.

I’m not claiming I invented these, I promise! Winking smile


  • 3 ripe bananas
  • 1/3 cup applesauce
  • 2 cups oats (I used gluten free oats)
  • 1/2 cup raisins (I used chocolate/peanut butter chips)
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 1/2 cup almond milk (I used cashew cream that I made but I don’t even think this ingredient is necessary)


  1. Mash bananas.
  2. Stir in the rest of the ingredients.
  3. Put on cookie sheet by the spoon full.
  4. Bake for 15-20 minutes or until set. I just had to keep checking on them.  I think it took about 15-20 min.

They are crazy good!


I think I’ll go make some!

Shredded Brussels Sprouts Salad

Ya’ll KNOW how much I LOVE Brussels sprouts.


Frozen, shredded and sautéed.


And, shredded Brussels sprouts salad.


So here is the step by step of how I make it.

Shredded Brussels Sprouts Salad



  • 1 bag of fresh Brussels Sprouts
  • 4 fresh broccoli stalks
  • 3 whole carrots
  • 1/2 bag of cut kale (I had this left over from making Crockpot Chicken Soup. I usually buy fresh bunches of kale; clean and remove stalks and chop in to large pieces)


  1. Put the slicing/shredding attachment in the food processor.
  2. Cut ends of sprouts and remove outer leaves. Wash well. Cut in half and remove white core. Put sprouts in top of food processor by the hand full. Shred away! Remove sprouts into large bowl.IMG_7521
  3. Clean and remove any stalks from kale. Stuff bunches of it in top of food processor and shred! Remove and put in large bowl.
  4. Change the attachment in food processor to the grating attachment.
  5. Clean and cut broccoli stalks, so they will fit into top of processor. Grate broccoli stalks. Leave in processor bowl.
  6. Clean and cut carrots, so they will fit in processor, and grate carrots.
  7. Remove broccoli and carrots and mix in a bowl. (Note: I usually just buy the bag of broccoli slaw and cut this step out, but I happened to have broccoli stalks that I didn’t want to waste and whole carrots. So, I made my own!)
  8. At this point, you have each veggie in it’s own bowl.  You will have more sprouts than the others so you can either equally mix the veggies together in a large bowl or bag, or do what I did and make individual servings.


For the individual servings: 2 cups sprouts, 1 cup kale, 1 cup broccoli/carrot.

Now for the FUN part!

When I eat these, I add:

  • 4 oz of protein
  • sunflower seeds
  • bell pepper
  • olives (green and black)
  • crumbly cheese (goat, feta or blue cheese)
  • Newman’s Own Oil and Vinegar salad dressing

Another idea:

Is to take the individual portion and sauté it in a little olive oil (or just water) until it is wilted and soft.  These ingredients make a WONDERFUL warm salad as well!

Oh! One more thing,

If you put dressing on an individual serving and realize you can’t eat it all, these veggies can sit in dressing overnight and still be super tasty the next day!  They really hold their own with dressing and actually get even better after sitting for a bit.

So there you have it! Yummy salad that is super healthy!
