Egg Cups and Stir Fry

Wow, it’s May 1st!  I love the month of May.  Remember how it felt in school when the month of May arrived?

Everything outside is so beautiful in May.  The weather is pretty consistent with cool mornings and evenings and warm ups during the day. And of course, summer is just around the corner which means my birthday is almost here! Love this month!

May will now always bring back fun memories of my first figure competition, so more reasons to love May!

Let’s talk about yesterday!

First, here’s my sweaty faces collage from all the workouts in April!  Not as many workouts as I would have liked, but there were some good ones!



I started the day at Title Boxing and got a sweet looking bruise on my forearm!



Once home, I got busy making some egg cups.

I dropped one egg down into each cup of a muffin pan, topped that with cooked turkey sausage and then topped that with shredded sharp cheddar cheese.

I baked them at 350 for 15 minutes.  There were so good!


I ate some dry cinnamon Chex cereal while those were cooking.

Meal #2: Rudi’s gluten free toast with peanut butter. I burned it trying to help Justin get our clients on the van and still ate it!

Meal #3: I made a veggie stir-fry for lunch.

Then added a left over grilled chicken breast.

Meal #4: Grilled chicken thigh and stir fry veggies

Meal #5: Chicken breast and stir fry veggies

I just couldn’t get enough of those veggies yesterday! So good!
