My weekend got a whole lot better yesterday!
A little tug of war to get the day going.
First, and most important, I had my Justin back. He woke up sore but feeling human again. I was so happy to have him back!
I started the day with some egg whites and gluten free toast.
Our client that was having a rough day on Saturday had an awesome day yesterday! The universe must have known I needed a break!
Meal #2: Oats with protein powder and a banana
Meal #3: Roast, potatoes, carrots and peas
After lunch it was time to get ready for my nephew’s birthday party.
My sister had it at Fun Run. It’s a great place to have a kid’s party. They have so much fun running around and the adults get to just hang out.
It was great to see the whole family!
Brad had a fun birthday!
In standard Stacy style, I picked up his gift on the way to the party along with a gift for my Dad (his birthday was last week also). I bought my dad a Nike sweatshirt from Sports Authority and they were on sale for $37.50 (regularly $50)! Score! I had to grab one for Justin and I as well.
I had mentioned to my Stepmom that I wanted more yarn for Christmas and she said she had a ton that I could have RIGHT NOW! Squeeeeaaal!
As soon as I got home from the party, I put on my new sweatshirt and snuggled in with my girls!
I was also hungry. No cake or ice cream for me at the party. I came home and made this:
I roasted a butternut squash with broccoli and chicken sausage. I got the idea from reading Peanut Butter Fingers the other day. I didn’t follow what she did exactly but I remembered her eating butternut squash and sausage and how good it looked. I just cubed the squash and the tossed the squash and with some frozen broccoli in olive oil. I took the sausage out of the casing and then just plopped chunks of raw sausage over the squash and broccoli. The whole pan cooked at 400 degrees for 40 minutes. Half way through I stirred everything to make sure it wasn’t sticking.
It was so easy to make and FANTASTIC! I am pretty excited about left overs today!

Helloooo, first I would like to say that you blog is great! I have been following it since your competition prep! Also, can I have the "recipe" for the gorgeous hat you are using in one of the pictures? I am assuming you made it! Is it crochet or tricot???
