Good Morning! It’s Monday! The start of a new week! I’m back!

I practiced the old saying “If you don’t have anything nice to say, don’t say anything at all!”. My attitude was in funky town last week, fo sho.
When I last left you (Thursday), I was in a tizzy about appointments and behavior issues. Well, Friday did not disappoint for rounding out the week of anxiety! I had to take one of our clients to get a CT scan and due to his behavior issues, I asked Justin to come with me for support and help. Oh my! Good thing he was there. Let’s just say, Justin and I were exhausted at the end of that appointment!
I was so happy to wake up on Saturday morning and not have to do a thing, well no appointments anyway! Justin played golf with his Dad and I relaxed and crocheted and watched movies.
Saturday night, we went to dinner with Justin’s Dad and Stepmom along with his Sister and her boyfriend. It was a lot of fun!
Sunday was our family dinner with my Dad’s side. In case it is confusing, there are family dinners with my Mom, Stepdad, James, Autumn and her family (My Mom’s side) and then there are family dinners with my Dad, StepMom and Benny, Chaz, Colt, Vann, Autumn, plus everyone’s significant other (My Dad’s side). So, the second group was here! It’s a crowd, but OH SO FUN! So loud! So much laughter! We did italian food and everyone brought dishes. I wish I would have taken a picture, there was so much food!
I wasn’t really in the mood for Spaghetti and meat sauce (we went to an italian place with Justin’s family the night before) so I also made an Italian Wedding Soup! You have to try it! It is so good. I did not take any pictures yesterday because I was limited on time and just had to get to work on it, but I’ll definitely be making it again and post it! I followed the recipe exactly, except I used gluten free noodles. I can’t wait to left overs today!
Family Dinner Menu
Appetizers:
- Chicken sausage (some hot, some stuffed with mozzarella)
- Toasted Ravioli
- Cheese and crackers
- Sausage Roll
Dinner:
- Spaghetti with meat sauce
- Italian Wedding Soup
- Salad
- Bread with dipping oil
Dessert:
- Chocolate/Vanilla cheesecake
- Chocolate Bundt Cake
As I was getting ready to leave for the grocery store yesterday, to get all my stuff to make dinner, Katy walked into the kitchen, shaking and all lethargic. Crap. Low blood sugar, now?! So, I gave her some honey, but then got nervous because I didn’t know how much honey to give and I didn’t know how low she was, so I ran her up to the emergency vet. By the time we got there, she was acting a lot better and her blood sugar read at 206 (which is still high but lower than she has been), so the honey may have helped or she could have just been cold!
I don’t play with diabetes, though, if I don’t feel comfortable with how Katy is acting, we are in the car to the vet’s office!
You may have noticed, but I took last week off from workouts. I just felt like I was trying to do too many things, but nothing really well. I needed to concentrate on Katy and our group home people, so the workouts got cut from the schedule. I am ready to get back at it this week (as I sit here typing this and missing title boxing!)
Saturday, I cleaned up my diet. I got food prepped and, with the exception of our family meals, kept it tight. I also got in a gallon of water each day. I felt a lot better just doing that!
