Summer Nights

I started yesterday off with a GLORIOUS 5-mile run with my Garmin Forerunner 405.  How did I ever live without it?  I loved the freedom it gave me.  I have been running the same 5-mile loop forever (well, a couple of months), but not yesterday!  I just ran around my neighborhood and the Garmin kept track of how far I was going and at what pace. The pace feature is the most motivating thing for me.  I wanted to keep my pace around 9:15 or faster.  So, anytime that number got higher, it was time to pick it up!  The watch felt great on my wrist.  It didn’t slide around or bother me at all.  I also got the heart rate monitor with it. There was a quick program to download, and now when I get close to my computer, it detects my Garmin and uploads the data from my run.  Love that!  I could see my heart rate, calories burned, pace, speed, all kinds of cool data PER MILE!

After my run, I leashed up the girls and took them for a walk.  It was a beautiful summer day!

When I got home with the girls, it was time to EAT! I fixed an omelet sandwich with a side of omelet:

  • Gluten Free English Muffin
  • 3/4 cup egg whites
  • 2 slices of Canadian bacon, cubed
  • Salt and Pepper

Since it was so gorgeous out, Justin and I hung out on the deck while I ate my breakfast and he drank some coffee.

Meal #2 was oats/egg whites pancakes with peanut butter and honey:

They were just as delicious as they look!

I lathered myself up with sunscreen and laid out for an hour or so.  Soakin’ up the Vitamin D!

I also ate Meal #4 outside: Taco Salad

  • 4 oz (or so) Ground turkey
  • Shredded cheddar cheese
  • Green leaf lettuce
  • Black olives
  • Salsa

  • 1 frozen banana
  • 1 cup frozen strawberries

We spent the evening on the screened in porch.  We put the couch together that had been sitting in our hallway all week and then we sat on it and drank wine!

Justin wanted a couch out there long enough for him to be able to lay on.  It passed the test!  It was the perfect way to end our evening.  We are looking forward to many more summer nights like this!

  1. Thank you so much for stopping by and offering your kind words...I feel blessed. And now hungry! Every single meal would be welcome at my table. Delicious and healthy to boot, doesn't get much better than that =)

  2. Okay. I really want to try those pancakes but I dont think my blender will make it into powder. I need to register for a food processor, won't that work? They look sooooo delicious, pancakes are such a pig out food for me- so when I want them, I want them just like you had them but with butter too!!! YUM. Your cashew chicken looked awesome too.

And congrats on the couch! It looks HUGE! it makes justin look like a tiny man, haha!

  3. I think my favorite line in this blog is "I fixed an omelet sandwich with a side of omelet"--just sounds so silly! But looks delicious! As do all your foodie pics. 8 weeks til real food--why did I decide on 2 competitions?? :)

  4. **This is totes hush-hush, because I'm not supposed to mention anything store-related via online (some company policy), but let's just say major markdowns are happening on Thursday ;)

  5. Sweet! Thanks, Liz!

  6. You have become quite the food photographer! I can't take it. Especially those pancakes!! I had to look away and I think I wept a little. ;)

  7. Of course my blender decided to DIE on me so those protein pancakes will have to wait until sometime later this week...I think I may be investing in a magic bullet :)

And I agree! I love the pictures of the food! it makes my day every time I read your posts!
