Godwin Bars

Here is the recipe for the Godwin Bars I have been eating.  I call them Godwin Bars because the recipe came from my friends, Jim and Rachel Godwin.

  • 1/2 cup Oats
  • 1/2 cup Kamut Cereal Flakes (sometimes called Spelt Flakes) I used brown rice crispies
  • 1 cup unsalted pecans or walnuts
  • 1/2 cup unsalted almonds
  • 1/2 cup agave nectar
  • 8-10 figs
  • 1 tbsp flax seed (milled is best)
  • 1 tbsp extra virgin olive oil
  • 1 cup dried blueberries I used1/2 cup blue berries, 1/2 cup raisins
  • 1/2 cup dried cranberries
  • 1/2 cup unsweetened coconut flakes I omitted this
  • 2 tbsp almond milk
  • 1/3 cup unsalted all natural peanut butter
  • 2 scoops whey protein powder (vanilla works best)
  • Splash of lemon juice and the zest from1 lemon
  • Cinnamon to taste

Preheat oven to 325 degrees.

In a food processor combine all the ingredients except the blueberries and coconut.  Process until well mixed.  Add in blueberries and coconut and pulse just enough so that both are incorporated. Place mixture in a large mixing bowl and stir if needed.  Form into 12 bars.  Hint: use a large cookie cutter to make it faster.  Bars should be no bigger than 3/4 inch thick. Bake on a cookie sheet for 20-25 min or until edges are slightly brown.  Let cool before serving.  Store in an airtight container for up to 14 days. Enjoy!
