2 Days Out

Here I am. Two days out from stepping on stage and I feel great.  I am enjoying my last cup of coffee until Sunday morning.

Cardio is done. Training is done. Pampering is done (with the exception of two coats of competition spray).  I feel ready.  I feel like I have done everything I could do.  I am trying to keep positive thoughts flowing.  Justin said the best thing to me yesterday in the midst of a little anxiety moment. He said, first of all that I was going to win, and then he said, No matter what happens Saturday night, you get to come home with that body.  And, after all, that is what all the work has been for, right?  It was like an instant calm settled over me when he said that.  He said lots of other really great things, but that is the sentence I keep using to calm my nerves.  Of course, I want to win or place in top 5 or just win ONE of the photo shoots up for grabs, but when I leave there on Saturday night, I will have achieved a goal that I have been dreaming about for years.  That is enough.  Thanks, Babe!!

Yesterday, was another busy (and emotional) day.  I did 30 minutes of light cardio and by light, I mean I literally walked at 3.5 mph for 30 minutes.  I did my last weight training which was a light upper body workout.  Then I headed down to HitchFit to take my transformation pictures with Diana.  It was so fun (and emotional).  The other girls that she has trained for the show were there (there were four of us) and it was great talking about everything with them.  We were all so emotional!  After the pictures were taken, we all stuck around and stuffed the swag bags for the show.  We stuffed 150 bags with some good stuff!  I was exhausted by the time I got home!

I know I said I wasn’t going to talk about my diet but I just have to show you what I have been eating for breakfast every morning.  I can’t keep it from you any longer.  (Plus it’s probably a meal most of you have eaten or are eating everyday anyway.  No big secret!!) They are just new to me!

Protein Pancakes

  • 1/2 cup oats (I use my regular 7-grain cereal)
  • 3/4 egg whites
  • dash of cinnamon

I put the oats in my Vitamix and make it into flour.  Then I pour the flour into the egg whites and add a dash or two of cinnamon.  I let that sit while the pan gets hot and it thickens a little.  Then, using a 1/4 cup measuring cup, I ladle the mixture into my hot pan.  It makes six pancakes. The picture below only shows five because I made the last one a little big.  I cooked the last three a little too long too, but they were still yummy!

I CAN NOT believe I have never made these before!  They are so freaking good!  When Diana took my protein powder away but told me I had to eat 1/2 cup of oats and egg whites for my protein, I tried choking down the oats with just cinnamon and was like….this is not going to work for a whole week.  So, I got to searching about how everyone makes their protein pancakes and couldn’t believe how simple it was!  I also couldn’t believe how good they turn out!

Of course, I take a close up shot of the one I burned a little.  These are a new staple.  I can only imagine how much better they are with a little natural peanut butter or some syrup or some grilled bananas!

I have been working out my menu that will start Monday so I can buy everything I need today so it’s in the house and ready.  I have a feeling my diet will be cookies and candy if I don’t have some meals ready!

My plan is:

Meal 1: 1/4 cup oats with 1 scoop protein powder and a banana

Meal 2: Protein pancakes with natural peanut butter

Meal 3: Lunch at a restaurant with Justin (probably mexican or sushi!)

Meal 4: Big Fat Chicken Salad with REAL vinaigrette salad dressing and ALL the fixings (including ALMONDS!).

Meal 5: Ground turkey burger with real BBQ sauce (Gates!) and brussel sprouts (oh, how I’ve missed these this week!)

There will be some candy and cookies put down that day too!!

On Tuesday, I plan on having a protein shake with spinach, almond milk, a banana, frozen strawberries and protein powder. Mmmmmm, I have missed those!  And for Meal #2, I plan on having a peanut butter and jelly (or maybe honey) sandwich!  Ohhhhh my gooooosh! yummy!

I am really looking forward to working out next week after eating some carbs.  I can’t wait to train again with some energy!!

So, that’s the plan.

But, enough day dreaming about next week.  I still have to get through the next couple of days.  I am going to hit up the grocery store today and then practice posing in my photo shoot outfits for tomorrow morning!  I’m excited and nervous!

After the photo shoot, is spray tanning and then the athlete’s registration and meeting is tomorrow evening!  I need to rest as much as I can today because it’s getting ready to be busy, busy!!

  7. So excited for you!! And your husband was absolutely right - no trophy has the same value as the changes you've made within yourself.

    A post-comp plan is very helpful in avoiding a bad rebound. Keep in mind that after the show, your body will be like a sponge cuz it's so depleted.
