The days are just cruising by! It’s exciting! Only 7 more weeks! I started my competition prep at 16 weeks out so I am past the half way point. Still feeling great! My body and mind really like this diet. I have never felt better in my life! I turn 35 in June and I’m feeling pretty darn good about it.
Yesterday was a medium carb day, so my energy level increased as the day went on and I ate more carbs. When my legs are sore, my body craves carbs!
We ran to the grocery store after we both worked out and I bought KALE! I have been reading in several people’s blogs about kale chips, most recently Peanut Butter Fingers, but have been too freaked out to try it myself. I like dark leafy greens in salad, soup, CHEESE DIP, but roasted with a little salt? Ummmm, no!
I was mistaken! I LOVE roasted kale and if you have been afraid to try it, I highly recommend you go get some kale and start roasting! It turns out so light and crispy. I felt like I was eating chips!
I tore the leaves off the stalk, placed them on a cookie sheet that I had lined with tin foil and sprayed with olive oil Pam. Then I sprayed the leaves themselves with Pam and sprinkled with kosher salt. I set my oven to 400 and just watched it. It only took like 5 minutes. I used two cookies sheets for only 1/2 a bunch of kale, so it would probably take a little longer if there were more on one pan.
The only thing I will do different next time is make all the pieces the same size, like maybe 2 inches or something. The smaller pieces definitely got crispier and more yummy. Kale is so good for you too! There are tons of sites that describe all the benefits, I chose this one for my blog.
Justin picked up a couple of treats for himself for this weekend, since we are staying in, he won’t get his cheat meal. One of the things he picked up was double stuffed Oreos!
Since this is my blog, I get to tell you how I feel about Oreos…I HATE Oreos! The little chocolate wafer of a cookie is okay, but that stuff in the middle…what is it? I remember eating Oreos as a kid because my Dad loved them and the white stuff always tasted so waxy and then left a coating in my mouth like I had just licked a stick of butter! Yuck! I’m glad he chose Oreos, because he happily enjoyed them and I was happy for him to eat them and that is one cookie that can sit in our pantry and be ignored by me!

- Morning cardio – ran 5 miles outside, took the girls for a walk
- Diana – trained quads and calves
Meals:
Meal #1: Oats with protein
Meal #2: Egg whites with gluten free toast
Meal #3: Grilled Chicken Breast, Kale Chips, Brown Rice
Meal #4: Grilled Chicken Breast, Kale Chips, Raw Broccoli with Italian dressing for dipping
Meal #5: Grilled Chicken Breast, Raw Red Bell Peppers, Walden Farms BBQ Sauce for dipping
I also ate a whole pickle and several sugar free Jell-O cups!
We settled in for the evening and watched Black Swan. It was pretty good. Several of my friends said they felt “weird” after watching that movie but I didn’t get that feeling. I may have known too much about the movie. I was expecting more, I guess.
