Part 1–Thursday

Good Morning!  I am going to get this post done early before I get busy and forget (like yesterday!). So, I’m writing this on Saturday but I’m still going to do a post for each day.  Today’s post will just be a two-parter!  Part 1 – Thursday and Park 2 – Friday.

Thursday, trying to remember what I did on Thursday….oh yeah, I started the day with 30 minutes on the elliptical doing intervals and then did a quick 10 minute body weight leg workout with curtsy lunges and side lunges.  Followed by pancakes!

Pancakes:

  • 1/2 cup gluten free oats
  • 3/4 cup egg whites
  • 6 oz. Chobani Vanilla Greek Yogurt
  • Dash of cinnamon
  • Drizzled with honey

This was my first time using yogurt in the batter and it was really good.  They were super moist. I am looking forward to trying other flavors now!

I ran Katy up to the vet and they did a quick glucose read on her as usual but also did a fructosamine test.  She is still running high, we are still bumping up her insulin.  Not too worried yet.  Well, a little worried.  Oh, let’s face it, I’m worried sick that she won’t get regulated and we’ll find out she has Cushing’s disease or something.

But! For now, I am going to get a home kit and start testing her at home more frequently and see if we can’t get a better picture of her daily glucose levels and give her a couple more weeks before we go down the road of testing her for other things.

After the vet, we met Justin’s Dad and Stepmom at a restaurant.  We were checking it out to see if it would be a good place to have our adult Christmas dinner in December.  Instead of all of us kids exchanging gifts, we all go out and have a fun dinner.  The restaurant was great. Done. That was easy!

Thursday afternoon, we had a meeting at our house for our group home.  Just the usual monthly meeting with our Service Coordinator.  We really like her so those meetings are always good.  She comes out once a month and just makes sure everything is going well (like, that my paperwork is up to date and the electricity is still on!) and to see if we need anything.  She is super helpful and anytime we need anything or just need to vent, she is very supportive.  Especially lately, when our job has gotten a little tough, she has been really great at making us feel that we are not alone in getting the behavior issues figured out for one of our individuals.  We are a team and we are all going to work through this together.

After she left, I made a pot of Italian Wedding Soup. My new comfort food.

We had a relaxing evening eating soup.
