Exercise = Happiness

Whenever I wake up on the wrong side of the bed, I should just wait to write my blog post until after I exercise!

I felt so great after Title Boxing yesterday morning.  My whole day turned around in that one hour.

Before I left for class, I walked the girls and ate some oats with protein powder.

After boxing, I ate some egg whites and gluten free toast.

Then it was time to head out for some errands.  First up was getting an estimate on the hail damage we got when we left our car at the airport while we were in Indiana.  Next up was lunch so we tried out a mexican place we had never been to before.  Luckily, I had just eaten so I didn’t power down a whole basket of chips by myself.  I ordered the shrimp enchiladas and ate one along with a couple bites of black beans and rice.

We had some grocery shopping to do, so with our bellies full, we headed to the store.

After emptying all the bags, it was time to eat again. Meal #4 was ground turkey and roasted brussel sprouts.

I am having my Mom, Stepdad, Brother, Sister and her husband over today for lunch to celebrate my Mom’s birthday (which is Monday).  I needed to get her a gift and knew exactly what it was going to be.

I’m like Oprah, whenever I love something, I want to share it with everyone.  One of my favorite blogs is Confessions of a Pioneer Woman and she has written a couple of books.  I knew the cookbook would be the perfect gift for my Mom.  After getting to Barnes and Noble and reading a little of the cookbook, I bought one for myself as well.

The recipes are great and I can’t wait to try some of them, but it’s the personal stories she shares throughout that had me buying my own copy.

It’s still July in Missouri, so it’s still H-O-T.  Something cold for dinner was perfect.

After reading the cookbook cover to cover last night, I purchased her other book “The Pioneer Woman - Black Heels to Tractor Wheels – A Love Story” for my Nook and started reading it right away. So far, I love it!

I hope everyone has an awesome Saturday.  I have already been a busy little bee this morning and have a full day of fun ahead of me!  See you tomorrow!
