No Sugar No Bake Cookies

So, yesterday I got busy trying to think of something to make that would be somewhat healthy but give me my “sweets” fix!  No bake cookies came to mind.  I took out my recipe card, given to me by my Grandma and started omitting ingredients.  After making these cookies, I hopped online and I am not the first person to do this…DARN! Winking smile

1 stick butter

1 cup Almond Milk

1 cup Chocolate Protein Powder (3 scoops)

1/2 cup peanut butter

3 cups Oats (quick cooking)

I brought the butter and milk to a boil, killed the heat and added the other three ingredients and started mixing. It was a little too dry so I added a couple more splashes of almond milk.

I used a cookie scooper to place them on tin foil and then I flattened them with my fingers.

(Next time, I will omit the butter and add some vanilla extract.  I saw this same recipe on www.livestrong.com and it didn’t contain butter, so I’m curious to see how those will turn out)

They were tasty just like this, but since they contain no sugar, I took it upon myself to add a little smear of Nutella!  I love them!

  2. Hi Amanda! One stick of butter = 4 oz (113g)
Yes, any type of milk is fine.

I am going to make them with no butter next time and see how they taste. That will bring the calories and fat down quite a bit.

  4. A Fine Balance: No, I did not eat these during comp prep. I could not be trusted with peanut butter, so I didn't get any until the last couple of weeks.
