Food to Go

I started my Saturday off with a bowl of oats with protein powder and a banana along with a couple of cups of coffee.

I needed to pack some food to go as I was headed down to watch the Black Belt pretest for the karate school I used to go to.  Just last year I was doing that same pretest. 

Aaaahhh, memories. It was more fun (and less sweaty!) as a spectator!  I made some egg white and oat loaves:

I made them the same way I make the pancakes, only I poured the batter into a mini loaf pan and baked it at 350 until it looked done.  I also added a little vanilla extract. Sorry, I didn’t watch the time.  I think it was around 15 minutes.  There were three, but they looked so good, I ended up eating them before I left (and one before I could even take a picture)!  I smeared a little peanut butter on a couple of the bites, but they were good plain.

Since, I ate what I planned on taking with me, I made a peanut butter and jelly sandwich to go and also grabbed the no bake cookies.  The pretest lasted about four hours, so I had plenty to get me through.  It was fun to see my karate family again and to cheer on all the black belt candidates!

When I got home, I ate my left over veggies and meat from our date night and cooked them up with some egg whites.  I also ate Justin’s 1/2 of a baked potato that he had left over.

It all looks so ugly in the pictures, but it was yummy in my tummy!!

I was kind of fooded out for the rest of the day.  Never really felt hungry, just wanted to snack.  So, I made myself a protein ice cream, Yogurtini style!

In the bowl:

  • 1 cup almond milk
  • 1 frozen banana
  • 1 cup frozen strawberries
  • 1 scoop chocolate protein powder
  • topped with graham crackers and chocolate/peanut butter chips

For my last meal, I did a smoothie (forgot to take a picture).

  • 1 cup almond milk
  • 1 scoop chocolate protein powder
  • 1 tablespoon cocoa powder
  • 1 heaping spoon of natural peanut butter
  • topped with several almonds

So that was my Saturday!  Hope everyone is having a great looooong weekend!  We are headed to my brother and sister-in-law’s today for a BBQ and family fun!

  1. All that food looks delicious! I am excited to make your Yorgurtini style ice cream and of course the loaf when I am allowed....48 days to go!

  2. I really want to try your healthy ice cream you've been making! It looks delicious :) Also I have never heard of an egg/oat loaf. I don't know if you know this about me but anything called "loaf" freaks me out. Im reminded of mom's horrifying greasy meatloaves. Oh GOD how I hated those!!!
