34 Days Out

2011April 0192011April 018

Progress pictures are up!  I can tell my waist has come in a little from last week but that’s about it.  Slowly but surely.  As long as there are still subtle changes, I’m happy.

This morning I am feeling tired (again!).  I just have to push through.  I only got in three miles this morning, fasted.  So, I have another hour and an half of cardio left to do today.  I am thinking I will spread it out in 30 minute increments or something so it doesn’t seem like so much.  I can go all out for 30 minutes as it seems like a lot less than going all out for 90 minutes!  I also need to lift weights (hammies and glutes).  Just have to dig deep and get it done.  No excuses.  Only 34 days left!  I CAN DO IT!

Yesterday, was a rest day and my body needed it!  I did a little cooking and then we went over to my in-laws house for the evening.  It was a great lesson in being able to sit in front of delicious treats and not HAVE to eat them!  Everyone was enjoying glasses of wine and other drinks and as much as I would loved to have had a glass of wine (or 5), it really didn’t bother me.  I will drink wine again, it’s not the end of the world! I brought my own food and didn’t touch anything else!  I also kept gum in my mouth the whole time so I didn’t mindlessly pick something up to snack on.

Meals:

Meal #1: Oats with protein

Meal #2: Oats with protein

Meal #3: Egg Whites with two slices of gluten free toast

Meal #4: Chicken breast with brussel sprouts (only took one picture AGAIN!)

Meal #5: Chicken breast with roasted green beans

I snacked on cucumbers and crystal light.  I didn’t feel too snack-y at all yesterday.  I told Justin, as I was eating my oats with chocolate protein powder, that the day after the competition, I am going to eat as many bowls of oats with protein as I want (oh, and some candy!).  It love it so much and my two little bowls a day just isn’t enough! I want MORE!

I made Cheerio treats to take over to my in-law’s.  I was in the mood to make something sweet, but knew it couldn’t stick around here, so going to their house was the perfect reason to make something.  I followed the same recipe for Rice Crispy treats only used Cheerios for the cereal.  Then I melted some chocolate almond bark and dipped one side of the treat in chocolate.  They looked good and those that ate them said they tasted pretty good too!

For breakfast, I made pizza crust cinnamon rolls for our group home individuals.  I had left over pizza crust that I had made a few days ago when I made them homemade pizzas. Here’s what I did:

Spread out the dough and poked holes in it with a fork:

Sprinkled cinnamon and sugar mixture all over it:

Rolled it up into a log and cut it.  Carefully spread them out on the cookie sheet (they wanted to fall open, and some of them did):

Baked at 425 for about 20 minutes or so.  I just kept checking on them until they started to turn golden brown.  They turned out like this:

It looks messy, but I took a tiny bite of one and they were yummy!  I am realizing that it’s hard to cook without tasting, so I’m done cooking sweet things until after the competition.  I don’t need to be tasting anything sweet right now! The cinnamon sugar mixture all over the pan was like extra caramel/candy sauce.

I made up a glaze out of powdered sugar and water and drizzled that over the top.  Of course, I forgot to get a picture of that! doh!  Probably because I wanted to serve them as soon as possible before I through one in my mouth!  The glaze over the top looked like it just completed them.  Everyone gobbled them up pretty fast, so I think they were a success!  Didn’t look like the normal soft and fluffy cinnamon roll.  The little bite I had was more crusty, but still tasted good and was super easy to make!

The pizza dough I made was a yeast free dough because I decided to make homemade pizzas last minute and didn’t want to wait for the dough to rise.  Next time I’ll plan ahead and make a better pizza crust. Next time, being after the competition!

So, yesterday was great.  I got some cooking out of my system, got to visit with family and see that I don’t have to eat things just because they are in front of me and now I’m ready to tackle this next week full force!

I have got to push it and get leaner!!

  1. I think you are looking terrific especially for being a month out. Your waist is teeny! Its hard to see progress on ourselves because we are so hard on ourselves but you are coming in very nicely.

  3. Yes, I agree, your waist looks tiny! 34 days is a lot of time, you are going to look itty bitty by then! Great job at the inlaws too, that's will power!

Oh, how do you make your brussel sprouts? I just started eating them so I wanted to find out how everyone else makes them!

  4. Thanks, Ladies! You all KNOW how much it means to hear these comments right now! All I can see is the fat I NEED to lose!

Lisa, I throw a whole frozen bag (16oz)of brussel sprouts in a round cake pan that I have sprayed with Olive Oil Pam. Then I give the brussel sprouts a quick spray and sprinkle them with salt. I put them in a 400 degree oven for 30-35 minutes. I love them like this, I hope you do too!

  5. First of all: you look AMAZING! Tiny gal! Second, it always amazes me how much I can relate to what you write. I do the same thing when I'm baking--I love to bake, but I CANNOT leave it around my house, so I'll bring it into work, my internship, class, or even to my trainer (haha, irony). It's been really hard to bake without tasting, and my favorite (and easiest) thing to bake is peanut butter blossoms. Needless to say, I haven't made them in weeks because I know I would give in and try one. I've found a replacement though--protein brownies! I experiment with different "mix-ins" and they are to die for!

  6. Sticking with the diet is so important. Just keep pushing!! The payoff is so rewarding....and as someone who just indulged for 2 days in all the junk food she dreamed about during prep....eating clean is soooo much more fun and doesn't give you a bellyache. Focus! You can do it! :)
