It’s Monday!

It’s also Martin Luther King, Jr. day. I must admit, I don’t do anything special on Martin Luther King, Jr. day.  I don’t go to any services or events that celebrate his life.  In fact, I am taking advantage of the fact that one of my friends has the day off because of the holiday and we are going to lunch.  I do think it is important to have the holiday, though, because it makes us think about him.  Even if we use the day for our own enjoyment, we know it is because this man used his days fighting for and preaching about equality and justice.

In other news, I am back down to what I weighed before I lost my mind and played the how-much-can-I-get-away-with game this weekend! I did not exercise yesterday. I really needed two days off to rest this body.  I was so sore Friday and even into Saturday.  That’s probably the last time I take two days off.  I need to be doing cardio on Saturday mornings.  Even if it’s just walking on the treadmill, I need to burn some extra calories.

My diet looked like this yesterday:

Meal #1: Banana (looks like I need to get busy eating these bananas!)

Meal #2: Egg whites, Gluten free toast

Meal #3: Ground chicken, brown rice with peas and carrots.

A lot of people don’t like fish, but I like mine with just salt, oil (olive, safflower or peanut), and then lemon juice all over it once it’s on my plate!  So good!  No matter what type of fish you buy, you can cook it like that and it will taste delicious.

  1. So excited to find your blog! I have way back in my head dreams of being a competitor. I doubt if I'd ever take the plunge...especially since my stomach looks three months pregnant right now.
